Vegan mushroom and spinach soup

Oh my...It tastes much better than it sounds

So,

  • 2 tblsp olive oil
  • 1 (8 oz) pkg sliced fresh mushrooms (3 cups)
  • ½ Cup finely chopped carrot
  • ½ Cup finely chopped onion
  • 2 medium potatoes, peeled, cut in cubes
  • 3 stalks celery
  • 4 cups water or vegetable stock
  • 1 ½ Cup spinach leaves (I used frozen spinach)
  • dash pepper
  • salt to taste
  1. Heat oil in large pan over medium heat
  2. Add vegetables; cook & stir about 3 minutes
  3. Add broth, spinach, pepper, salt, mix well.
  4. Cover it and let it simmer for about 30 min.
