Oh my...It tastes much better than it sounds
So,
So,
- 2 tblsp olive oil
- 1 (8 oz) pkg sliced fresh mushrooms (3 cups)
- ½ Cup finely chopped carrot
- ½ Cup finely chopped onion
- 2 medium potatoes, peeled, cut in cubes
- 3 stalks celery
- 4 cups water or vegetable stock
- 1 ½ Cup spinach leaves (I used frozen spinach)
- dash pepper
- salt to taste
- Heat oil in large pan over medium heat
- Add vegetables; cook & stir about 3 minutes
- Add broth, spinach, pepper, salt, mix well.
- Cover it and let it simmer for about 30 min.
